Here is a wonderful starter dough to try out in your Scorpio Pizza Oven! Stay tuned for recipes and other types of dough to experiment with as well!
Ingredients
674 grams 00 flour
391 grams of cold water
22 grams of kosher salt
13 grams of olive oil
0.4 teaspoons of active dry yeast
Makes 4 dough balls that weigh 275 grams each
Directions
- In a separate bowl, mix dry ingredients (flour, kosher salt and active dry yeast)
- Pour cold water and olive oil into a stand mixer bowl
- Slowly add dry ingredients to the wet ingredients, stirring as you go
- In a mixer on speed 1, mix ingredients for 2-3 minutes
- Cover the dough in a sealed container for 2 hours at room temperature (70-72 degrees Fahrenheit)
- Cut dough into 4 dough balls at 275 grams and store in a sealed container for a minimum of 5 hours
- You can place the dough into the refrigerator and use it within 36 hours, or place it in the freezer and store it for up to 2 months
